Ballymaloe Beetroot, rocket and blood orange tower



(Serves 2)
165g pack Ardsallagh soft goat’s cheese
2 tbsp Ballymaloe Beetroot
2 handfuls of rocket
1 blood orange
1 tbsp toasted walnut


If you’re not feeling carnivorous or looking for a summery starter, this is fun to make and you can add as many layers as you like, making the tower higher. Adding a toasted walnut layer would be a great addition.

Roughly chop the beetroot and set aside, do the same with the rocket and walnut. Using a knife peel the blood orange and cut into thin disks. To assemble, line 2 stainless steel cooking rings or scone cutters with silicone paper. Create layers using a tablespoon of goat cheese followed by chopped rocket, add another layer of goat cheese pressing down to compact. Add a layer of Ballymaloe beetroot, followed by a final layer of goat cheese. Top with a slice of blood orange. You can refrigerate at this point for later. To serve remove the stainless steel cooking ring and gently peel away the silicone. Add some rocket leaves, chopped beetroot and walnut around the tower.
