Roast Pork Fillet with Ballymaloe Jalapeno Pepper Relish. What you need:
- Serves 4
- 1 large or 2 small pork fillets
- salt and pepper
- dash of olive oil
- 1 teaspoon thyme
What to do:
Trim pork fillet of all fat and gristle. Rub with olive oil and place on a hot pan and allow to colour on all sides. Sprinkle with a little chopped thyme and season with salt and pepper. Roast in a moderate oven, 180C (350F/Gas 4), for 20-30 minutes. Allow the pork to rest for 10 minutes in a warm oven before carving. Serve with roast potatoes, seasonal vegetables and Ballymaloe Jalapeno Pepper Relish.
