Crushed Avocado on Toast with a Softly Fried-Egg and Ballymaloe Original Relish

Ingredients
  • 1 Ripe avocado
  • 1 tsp chopped mint
  • A squeeze of lime juice
  • 1 slice of bread preferably sourdough
  • 1 knob of butter
  • 1-2 tbsp extra virgin olive oil
  • 1 free range egg
  • 1 generous tsp Ballymaloe Original Relish
  • salt

  1. Remove the avocado flesh from its skin and mash with a fork. Add the mint and a squeeze of lime. Season with salt then mix well.
  2. In the meantime, heat a little olive oil in a heavy-bottomed frying pan. When the pan is nice and hot toast the bread in the pan for about 2 minutes on each side or until golden around the edges and has absorbed the oil. Take out and set aside. Wipe out the pan with a piece of kitchen paper and put the pan back on the heat.
  3. When the pan is almost hot, fry the egg in a little butter.
  4. Spread the avocado mixture over the toasted bread, place the egg on top and serve with Ballymaloe Original Relish on the side.
  5. NB: For a nice variation simply replace the avocado with cooked broad beans.
