Ingredients
  • 300 g Penne Pasta cooked
For the sauce:
  • 250 g Grated Cheddar Cheese
  • 100 ml Cream
  • 2 tbsp Ballymaloe Smooth Relish
  • 1 tsp Dijon Mustard
  • 1 small Red Onion (75g) finely diced
  • Salt & Pepper
  • Basil to garnish

Instructions
  1. Bring water to boil in a saucepan and cook the pasta for 10-12 minutes.
  2. Mix all the ingredients together for the sauce and season with salt and pepper.
  3. Place the cooked pasta in an oven-proof dish.
  4. Sprinkle the sauce mixture evenly over the pasta. Place in a pre-heated oven at 200 degrees. After 10 min gently stir the dish just enough to let the cheese mixture sink down through the pasta. Cook for a further 10 – 15 min or until to cheese is beginning to turn a lovely toasted golden colour on top. Sprinkle with chopped basil (optional) and serve.
  5. Tip: Add bacon lardons at step two to add extra flavour and texture to the dish. Simply fry up 4 slices of bacon and slice into thin strips. It will go down a treat at your dinner table.
