Grilled Chicken & Rocket Sandwich with Ballymaloe Cranberry Mayo

While cranberries may traditionally be thought of and enjoyed at Christmastime, Ballymaloe Cranberry Sauce is a tasty addition to any sandwich all year round. We slow-cook whole cranberries to bring out the flavour of the berries and, if we do say so ourselves, our Cranberry Mayo (made with equal parts cranberry sauce & Ballymaloe Mayo) is a thing of beauty.
- 2 slices sourdough bread
- 1 chicken breast (cooked or leftover chicken)
- 2 handfuls rocket leaves
- 2 tbsp Ballymaloe Cranberry Sauce
- 2 tbsp Ballymaloe Mayo
- Mix the Ballymaloe Cranberry Sauce with the Ballymaloe Mayo and spread generously on your bread. Top with the rocket, cooked chicken and some more cranberry mayo, before popping the lid on. Simple, yet very satisfying!
