Blackened Cauliflower Salad with Ballymaloe Balsamic & Apple Cider Vinegrette

Ingredients
  • 250 g cauliflower florets
  • 2 tbsp olive oil
  • 90 ml water
  • 50 g flaked almonds
  • 40 g cranberries (dried)
  • 1/2 Red Onion (finely sliced)
  • 20 g kale (de-stalked and finely shredded)
  • 40 g baby spinach leaves
  • 4 small handfuls mixed leaves
  • 15 g mixed pumpkin and sunflower seeds
  • honey (to drizzle)

Instructions
  1. Heat 2 tbsp of olive oil in a frying pan.
  2. Carefully add in the cauliflower florets and season well with salt and pepper.
  3. Allow the cauliflower florets to char and blacken. Once the cauliflower is charred, carefully pour in the water and allow the florets to steam and cook through (the water will evaporate).
  4. Remove from the pan and allow to cool.
  5. In a medium-heat frying pan, gently brown the flaked almonds, tossing continuously until they turn golden-brown in colour. Transfer onto a plate immediately.
  6. Place the salad leaves, kale and spinach in a large bowl.
  7. Drizzle over a tbsp of Ballymaloe Balsamic and Apple Cider Vinegrette and gently toss the leaves until evenly coated.
  8. Place the tossed leaves on a plate and add the charred cauliflower.
  9. Sprinkle with cranberries, thinly-sliced red onions, toasted flaked almonds, mixed seeds, a drizzle of honey and finally an extra splash of Ballymaloe Balsamic and Apple Cider Vinegrette. Enjoy!
